3.333 cups fresh Broad bean
2 ¼ cups Snap pea
cup heavy whipping cream (hollandaise with crème frache added)
3 tsps olive oil
1 lemon
3 sprigs Basil (chopped)
1 small onion (peeled and finely sliced)
12 Chives
salt

Preparation steps

1.
Bring a large saucepan of salted water to the boil, add the broad beans and cook for 4 minutes. Drain and immediately plunge into cold water. Peel and reserve.
2.
Wash the mange tout and cook in a pan of boiling salted water for 2 minutes. Drain and refresh in cold water. Reserve.
3.
Mix the crème fluorette and juice of the lemon together with 2 tsp olive oil, salt and pepper. Add the chopped basil.
4.
Divide mange tout, broad beans and sliced onions between 4 glasses. Drizzle with the cream sauce and basil. Garnish with chives before serving.
