- 2 ⅔ cups floury potatoes
- 2 cups White bean (from a tin, rinsed and drained)
- 2 scallions (chopped)
- 1 clove garlic cloves (finely chopped)
- 1 red chili pepper (finely chopped)
- 2 Tbsps freshly chopped parsley
- 1 egg
- Caraway (ground)
- all-purpose flour (as needed)
- 2 Tbsps vegetable oil
- For the dip
- 8 Tomatoes (peeled, deseeded and finely diced)
- 1 white onion (diced)
- brown sugar
- 1 tsp lemon juice
- Chili powder
Preparation steps

Cook the potatoes in boiling salted water for around 30 minutes. Peel, transfer to a bowl and allow the steam to evaporate. Add the beans and mash well.

Add the spring onions, garlic, chilli, parsley and egg to the bean and potato mixture. Season to taste with salt, ground black pepper and caraway. Mix in a little flour if needed to make a mixture that is easy to shape.

Shape the mixture into 8 burgers and fry in hot oil in a non-stick frying pan for 4-5 minutes on each side until golden. Drain on paper towels.

For the dip, mix together the tomatoes and onion. Season to taste with a pinch of sugar, lemon juice, salt and chilli. Serve as a dip with the burgers.
