- 3 Tbsps butter (melted and cooled)
- 1 large egg (at room temperature; separated)
- 1 ¼ cups unbleached all-purpose flour
- 1 tsp Baking powder
- 1 pinch salt
- ¾ cup milk
- 2 Tbsps pure Maple syrup
- For Maple Whipped Cream
- 1 cup heavy whipping cream
- 1 Tbsp granulated sugar
- ½ tsp pure vanilla extract
- 1 Tbsp pure Maple syrup
- For Grilled Bananas
- 2 Tbsps butter (melted)
- 2 medium Banana (peeled; halved lengthwise and then quartered)
- 1 cup fresh Strawberries (rinsed and sliced; for garnish)
Preparation steps

For Maple Waffles:

Preheat the waffle iron or pan.

Beat the egg white in a small mixing bowl until stiff peaks form; set aside.

In a separate bowl, combine all dry ingredients and set aside.

Combine egg yolk, milk, maple syrup and melted butter. Add to dry ingredients, mixing until just blended. Gently fold in the egg whites. Do not over-beat the batter.

Coat the hot waffle iron with non-stick cooking spray. Pour batter into each waffle mold. Cook waffles according to manufacturer's instructions until cooked through and golden brown, approximately 3 to 4 minutes. Repeat process until all the batter is gone.

For Maple Whipped Cream:

Chill a metal or glass bowl in the freezer.

Add whipping cream to the chilled bowl. Beat cream on high speed until it begins to thicken. Add sugar, vanilla, and maple syrup. Continue beating until stiff peaks form.

For Grilled Bananas:

Heat grill pan over medium-high heat. Brush hot grill pan with melted butter. Grill bananas until golden but still firm.

Serve waffles hot with grilled bananas, sliced strawberries, maple syrup and a generous dollop of maple whipped cream. Enjoy.
