Preparation steps

For the waffles: Beat the butter until fluffy, gradually stir in the beaten eggs, add the salt and flour then stir in the milk and Parmesan cheese until smooth. Let rest for about 30 minutes then season with salt, pepper and nutmeg.

Heat the waffle iron over medium heat, brush lightly with oil and cook the waffles until golden brown.

For the sauce: Blanch the peas in boiling salted water for about 2 minutes. Shock in ice water and drain. Mash with the yogurt and season with salt and lemon juice. Serve with the waffles.
