Walnut Apple Cake

Walnuts are packed with protein as well as various B vitamins, which help support a healthy nervous system.
If you like, you can reduce the proportion of whole cane sugar in the cake and increase the honey content.

- 4 tart Apple
- ½ lemon (juiced)
- 2 Tbsps Calvados (or apple cider)
- 5 Tbsps Walnut
- 9 ozs softened butter
- 7 Tbsps brown sugar
- 7 Tbsps honey
- 1 tsp Ground cinnamon
- 1 generous pinch Cardamom (ground)
- 1 generous pinch cloves (ground)
- 1 pinch salt
- 5 eggs
- 2 tsps Baking powder
- 6 ozs ground Walnut
- 12 ozs Pastry flour
- 5 ozs milk
- 1 Tbsp finely chopped rosemary
Preparation steps
Line baking pan with parchment paper.
Peel apples, quarter and core, dice. Mix with lemon juice and Calvados. Chop walnuts coarsely. Whisk butter with brown sugar, honey, cinnamon, cardamom, cloves and salt until creamy. Gradually add eggs, whisking. Combine flour with baking powder and ground walnuts, add flour mixture to butter mixture, alternating with milk, to make smooth and spreadable batter. Add apples with chopped walnuts and spread batter in a pan. Bake in preheated oven at 350°F for about 40 minutes. Remove from oven and let cool.
Cut into pieces and serve.
