Walnut kernels provide a tasty bite and a portion of unsaturated fatty acids that are good for the blood vessels. Together with oat flakes and wholemeal flour, they also bring valuable B vitamins into play.
If you prefer, you can also use whole hazelnut kernels instead of walnut halves to cover the dough.

- ½ lemon
- 5 ozs Whole wheat flour
- 7 ozs rolled Oatmeal
- 2 ozs Raw cane sugar
- 1 pinch salt
- 2 eggs
- 7 ozs butter (room temperature)
- 4 ozs dried Apple ring
- 1 oz Walnut
- 2 Tbsps Apple jelly

Preparation steps
Rinse lemon in hot water, dry and finely grate zest.
Combine flour, oats, sugar, lemon zest and salt in a bowl.
Add eggs and butter and beat with dough hook of a hand mixer until dough is crumbly.
Use hands to knead into a smooth ball and cut in half.
Line a baking sheet with parchment paper. Place half of dough on sheet and cover with plastic wrap. Roll out with a rolling pin until very thin. Place other half of dough on a piece of plastic wrap on the work surface, cover it with a second layer of plastic wrap and also roll out very thin.
Allow sheets to chill for about 1 hour. Arrange about half of apple rings side by side on top of dough on baking sheet, and place a walnut half in the middle of each ring.
Remove dough from plastic wrap and lay on top of other dough sheet, pressing to seeal around edges.
Bake dough on middle rack of preheated oven at 180°C (approximately 350°F) for about 15 minutes.
Arrange remaining apple slices on top of dough.
Heat apple jelly in a small saucepan and brush over warm tart and apples. Cut into bite-size pieces, then let cool before serving.
