Preparation steps

1.

Chop ciabata coarsely. Heat 2 tablespoons of oil in a pan and saute bread for a few minutes. Season with salt and pepper and spread on a sheet lined with baking paper. Bake in preheated oven at 220°C (approximately 425°F) (gas mark 3) for about 10 minutes. Dice tomatoes coarsely. Peel onion and cut into very thin rings. Rinse basil, shake dry and pluck off leaves. Whisk vinegar with oil, honey, mustard, fresh crushed garlic and broth until smooth, add oil and whisk well. Combine tomatoes, onion rings, basil and bread cubes and toss with the vinaigrette. Serve salad immediately.
