Ingredients

For the toasted almonds
250 grams almonds
1 tsp Canola oil
200 grams sugar
½ tsp cinnamon
For the wasabi nuts
1 Tbsp Wasabi paste
250 grams Peanuts (unsalted)
vegetable oil (for greasing)

Preparation steps

Preheat a convection oven to 150°C (approximately 300°F).

Beat the egg whites with the salt until semi-stiff. Gradually incorporate the wasabi powder and the cornstarch, then mix in the wasabi paste. Add the peanuts, and mix with a fork. Spread the nut mixture onto a greased baking sheet. Bake in the oven for 45 minutes, until crispy. Remove from the oven and let cool.

Heat the oil in a pan. Add the almonds, and sauté, stirring constantly. Coat with the cinnamon and the sugar, caramelize slightly, and let cool on an oiled piece of aluminum foil. Separate the almonds, so they don't stick together.
