½ tsp lemon zest
1 tsp Ground cinnamon
6 Tbsps Spelt flour
¾ oz ground Hazelnuts
1 Tbsp Vanilla
2 Tbsps milk
2 ½ Tbsps butter

Preparation steps

1.

Combine the stevia, lemon zest, cinnamon, flour and nuts in a bowl. Add the vanilla, milk and butter; knead together with hands until smooth. Wrap in plastic and chill for 2 hours in the refrigerator.

Preheat the oven to 180°C / 350°F and line two baking sheets with parchment paper.

Divide the dough into portions roll out about 1/8 inch thick on a floured surface. Cut star shapes from the dough with cookie cutters, and place on the sheets. Bake in the oven for 10 minutes. Allow to cool, then serve sprinkled with stevia.

4.

The cookies will keep for several months in an airtight container.
