150 grams Bocconcini 9% fat)
600 grams shrimp (peeled, deveined)

2 Tbsps lemon juice
4 Tbsps olive oil
1 tsp honey

Preparation steps

1.

Peel and core the watermelon, then cut into bite-sized pieces. Rinse and dry the basil, then cut into thin strips. Drain the mozzarella.

Rinse the shrimp under cold water, pat dry, and season with salt and pepper. Heat the canola oil in a pan. Cook the shrimp over high heat for 2-3 minutes, until golden brown.

Mix the lemon juice, olive oil, and honey to form a vinaigrette. Season to taste with salt and pepper.

4.

Mix the melon, mozzarella, shrimp, and basil. Divide into 4 bowls and drizzle with the vinaigrette.
