Ingredients

For the stew
250 grams dried, white Beans
250 grams sliced Bacon
300 grams carrots
300 grams green Beans
300 grams potatoes
1 large, tart Apple
1 large, firm Pear
salt
freshly ground peppers
sugar
For garnishing
4 Tbsps parsley (finely chopped)

Preparation steps

1.

For the stew: soak beans in 1.5 liters (approximately 6 cups) of water overnight.

2.

Next day, cook beans in soaking water for 30 minutes on medium heat.  Add bacon and cook for another 30 minutes.

3.

Peel and slice carrots. Rinse and dry green beans, cut into pieces. Peel, rinse and dice potatoes. Peel and core apple and pear, cut into wedges. 

4.

Add fruit and vegetables to beans and bacon mixture, season with salt, pepper and 1 pinch of sugar. Simmer for another 30 minutes.

5.

Finally, remove bacon and cut into thick slices. Arrange vegetables on plates, top with bacon slices and sprinkle with chopped parsley. Serve.
