6 Whole-wheat tortillas (from a supermarket)
750 grams Beefsteak tomato
2 medium-sized onions
2 fresh, medium-spicy chili peppers
juice of Limes
salt
freshly ground peppers
1 bunch fresh cilantro
150 aged Gouda
6 eggs
2 Tbsps vegetable oil (for frying)

Preparation steps

Blanch tomatoes, peel, remove seeds, cut into small pieces and place in a bowl. Peel onion, chop finely and mix with tomatoes. Rinse chile peppers, cut in half lengthwise, remove seeds and ribs and cut into very small. Mix chile peppers in a bowl with lime juice. Add chile pepper mixture to tomato mixture and season well with salt and pepper. Coarsely chop cilantro. Add cilantro to the bowl, mix and chill until ready to serve.

Heat oil in a skillet and briefly fry wheat tortillas to make them soft. Then remove and place tortillas on the work surface. Fry 6 eggs in the skillet and season with salt and pepper. Spread tomato sauce on tortillas. Sprinkle with gouda. Cook tortillas briefly under a preheated oven broiler, watching carefully, until cheese melts. Place tortillas on 6 plates, place a fried egg on each and serve warm.
