4 cups waxy potatoes (cooked the previous day, peeled and sliced)
1 onion (finely diced)
5 eggs
2 cloves garlic cloves (finely sliced)
3 Tbsps cream
1.333 cups Serrano ham (thinly sliced)
1 ⅔ cups cherry Tomatoes (halved)

Preparation steps

Preheat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Heat the oil in a large, oven-proof frying pan. Add the potatoes and onion, cover and fry gently for around 5 minutes.

Meanwhile, whisk the eggs with the garlic and cream in a bowl. Season with salt and ground black pepper and pour over the potato and onion mixture. Tilt the pan to distribute the egg mixture evenly and cook briefly, then transfer to the oven and bake for 15-20 minutes until cooked through. Cover with foil if necessary to prevent it from browning too much.

Leave to cool then cut into small squares. Roll the ham and skewer each roll on a cocktail stick with a tomato half. Stick one skewer in each piece of omelette and arrange on a serving plate.
