5 green Olives
5 black Olives
2 Tbsps chopped flat-leaf parsley
4 Tbsps olive oil
3 Tbsps lemon juice or Vinegar

Preparation steps

Soak beans overnight in cold water, then drain, rinse and place in a pot. Fill pot with enough cold water to cover the beans, then season with salt. Bring to a boil, then reduce heat and cook the beans over low heat until al dente, about 1 hour. Drain in a colander. Meanwhile, peel the onions and cut into thin rings. Soak onion rings for 15 minutes in cold water.

Drain onions and place in a salad bowl. Add olives and parsley. Add the drained beans and stir well. Stir the olive oil with the lemon juice or vinegar until smooth, season with salt and pepper and fold into the salad. Cover the bowl with plastic wrap and let the bean marinate at room temperature for 4 hours. Season again before serving.
