- 100 grams white Couverture
- 150 grams butter
- 125 grams sugar
- 220 grams Pastry flour
- 150 grams ground almonds (blanched)
- 1 generous pinch Ground clove
- 1 generous pinch Ground cinnamon
- milk (as needed)
- softened butter (for the ramekins)
- sugar (to sprinkle)
Preparation steps
Chop the white melting chocolate coarsely and melt in a bowl over a hot water bath, and allow to cool again.
Beat the butter with the sugar until creamy. Add the melted white chocolate with the flour, ground almonds and ground clove and cinnamon. Mix the mixture well and knead, if necessary with a little milk, to a smooth dough.
Grease the bear paws ramekins (about 5 cm) (approximately 2 inches) slightly with butter. Form small balls from the dough and press into the bear paw ramekins in a thin layer. Place the ramekins in a baking tray.
Bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 15 minutes.
Remove from the oven and cool slightly. Release the bear paw cookies from the ramekins, sprinkle with sugar and let cool on a wire rack.
