Preparation steps

Rinse the orange, pat dry, grate the zest and squeeze the juice. Rinse the apples, peel, core and grate coarsely. Sprinkle some orange juice over the grated apples.

Grate the chocolate finely. Beat the butter with the sugar and vanilla flavor until fluffy. Separate the eggs. Add the egg yolks into the butter mixture, and mix in the milk, whole-wheat flour, baking powder, oat flakes, orange zest, gingerbread spice and almonds to form a smooth batter.

Add the grated apples and chocolate into the batter. Whip the egg whites until stiff and gently fold along with the apple sauce into the batter.

Spread out the batter in a baking sheet lined with baking paper and bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) for about 40 minutes.

Remove the cake from the oven, let cool and serve cut into 20 pieces.
