Ingredients

90 grams softened butter
1 generous pinch Lemon peel
50 grams ground almonds
100 grams Whole wheat flour (can substitute spelt flour)
1 tsp Baking powder

50 grams sugar

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Butter the muffin. Beat the eggs with the sugar and vanilla sugar until creamy. Combine the egg mixture, butter, lemon zest, nuts, the flour and the baking powder and stir everything into a batter.

Pour batter into the ramekins or muffin tins and bake until golden brown for about 25 minutes. Remove from oven, let cool slightly and then remove from ramekins or tins. Caremelize the nuts with the sugar in a saucepan.

Place caramelized nuts on a baking sheet lined with parchment paper, let cool and roughly chop. Garnish with a sprinkling of caramelized nuts. Serve the muffins wrapped in parchment paper.
