Whole Wheat Pasta with Vegetables

- 300 grams Whole wheat ribbon pasta
- 4 scallions
- 300 grams Tomatoes
- 200 grams shiitake or Oyster mushrooms
- 75 milliliters Vegetable broth
- 2 Tbsps Lime juice
- 3 Tbsps bright soy sauce
- 4 Tbsps soybean oil
- salt
- cayenne pepper
- 1 tsp ground ginger
Preparation steps
Cook the noodles according to package directions until al dente, drain in a colander, rinse under cold water and drain. Rinse and trim the scallions and cut into 5cm (approximately 2-inch) long, thin strips. Remove the tomatoes from the stems and blanch in a pot of boiling water for a few seconds. Drain, peel, quarter, remove the seeds and cut into pieces. Clean the mushrooms and cut into strips (if using shiitakes, remove the stems).
In a small bowl, mix the broth with the lime juice and soy sauce. Heat the oil in a wok or large skillet and saute the mushrooms, stirring for 1 minute. Add the scallions and saute 1 minute. Add the tomatoes and saute, stirring for about 1 minute. Stir in the noodles, and the sauce mixture and stir to combine.Bring to a simmer, season with salt, pepper and ginger and serve.
