350 grams water (lukewarm)
10 grams salt
500 grams Spelt flour
2 Tbsps flaxseed
1 Tbsp Sesame seeds
honey (cold extracted)

Preparation steps

1.

Preheat the oven to 200°C (approximately 400ºF).

Combine the flour with the salt in a bowl and make a well in the center. Dissolve the yeast in a little warm water and pour into the well. Bring together and knead for about 10 minutes with the remaining water to form a smooth dough. Add a little extra water or flour if necessary. Add the sesame and flax seeds and knead well.

Cover and leave to rest for about 60 minutes. Knead the dough again vigorously, divide into portions and shape into rolls.

Place on a lined baking sheet and bake for 20 minutes. Place a bowl of boiling water in the oven during baking.

Allow to cool slightly on a wire rack and serve with honey and butter if desired.
