1 cube Yeast (3 tbsp approx.)
3.333 cups Whole wheat flour
2 tsps salt
42 ozs turkey breasts
salt
peppers (freshly ground)
½ tsp paprika
cayenne pepper
4 Tbsps clarified butter
5 sprigs rosemary
5 sprigs thyme
10 Sage

Preparation steps

1.
Crumble the yeast into a cup with 5 tbsp of lukewarm water. Stir until smooth.

In a bowl, mix the flour with the salt. Make a well in the middle. Pour in the yeast, sprinkle with a little flour and allow to rest for 15 minutes.

Add another 200-250 ml of lukewarm water and knead, with your hands, into a smooth dough. Form into a ball and cover with a kitchen towel. Allow the dough to raise for an hour until doubled.

Preheat the oven to 180°C | 350F | gas 4.

When the dough has doubled, punch it down and knead thoroughly.

Wash the breast and pat dry. Season with salt, pepper and cayenne pepper.

On the top of the stove, heat the clarified butter in the roaster. Saute the breasts until golden brown all over. Remove the roaster from the stove.
8.
Wash and shake the herbs dry.
9.
Place the breasts back in the roaster and place the herbs around the sides.
10.
Roll out the dough on a work space that has been lightly dusted with flour to the size of the roasting pan. Place it over the breasts and press firmly against the edges of the roaster.
11.
Bake in the preheated oven for approximately 1 hour and 45 minutes.
