2 ¼ cups all-purpose flour
¾ cup Whole wheat flour
1 cup sugar
½ tsp salt
¼ tsp baking soda
1 Tbsp Baking powder
1 cup chopped Nut
1 cup Dried Fruit (raisins, currants, sultanas, etc.)
1 large egg
cup sunflower oil
1 cup milk
1 tsp vanilla extract

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 23 x 13cm|9" x 5" loaf tin.

Mix together the dry ingredients except for the fruit and nuts, in a mixing bowl until blended. Stir in the fruit and nuts.
3.
Whisk the egg with the oil, milk and vanilla. Stir into the flour mixture.
4.
Put the mixture in the tin and spread evenly. Bake for about 1 hour until coooked through. Insert a skewer or cocktail stick into the centre - it will come out clean when the loaf is cooked. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
