- 1 cup plain Yogurt
- 3 Tbsps sugar
- 1 cup cream (48% fat)
- 2 tsps Powdered gelatine
- 3 Tbsps hot water
- 1 ⅔ cups cold water
- 1 cup caster sugar
- 3 cups Blueberries
- ¼ cup Patxaran (Pacharan)
Preparation steps
1.
Mix together the yoghurt and sugar. Set aside.
2.
Whisk the cream until it is the same texture as the yoghurt.
3.
Sprinkle the gelatine over the hot water in a small bowl and stir to dissolve.
4.
Stir into the yoghurt.
5.
Stir in the whipped cream and pour into 4 moulds. Chill for about 2 hours until firm.

Heat the water and sugar in a pan. Stir over low heat until the sugar has dissolved.
7.
Increase heat tand bring to a boil without stirring. Boil, uncovered, for 10 minutes, until the syrup thickens slightly.
8.
Reduce the heat and add the blueberries. Cook for 3 minutes until the berries just start to soften.
9.
Stir in the liqueur. Set aside to cool, then chill.
10.
Unmould the mousses and serve with the berries and syrup.
