12 ozs Corn (can or frozen, drained weight)

6 Tbsps olive oil
3 Tbsps white balsamic vinegar
1 tsp honey
2 sprigs thyme
½ bunch Basil
8 ozs Feta

Preparation steps

Clean the zucchini, quarter lengthwise and cut into small pieces. Cook in boiling salted water for 30 seconds, drain and let drain again. Place in a bowl with drained corn (if using frozen corn thaw first) and season with salt and pepper. Add olive oil, vinegar, and honey and mix well. Arrange on a platter.

Wash thyme and basil, shake dry and pluck leaves. Crumble feta, mix with thyme leaves and sprinkle over salad. Add basil leaves decoratively and serve the salad.
