2 Tbsps white balsamic vinegar
1 Tbsp Lime juice
1 tsp honey

Preparation steps

1.

Rinse the zucchini and slice lengthwise into thin strips. Rinse the peppers and cut lengthwise. Remove the seeds and white membranes and cut into thin rings

Whisk the oil with the vinegar, lime juice, and honey. Season with salt and pepper. Toss the dressing with the zucchini and peppers. Rinse the mint, shake dry and pluck off the leaves.

3.

To serve: Arrange the salad in bowls and garnish with mint.
