400 grams Tofu
½ whole lemon
50 grams ground almonds
2 Tbsps breadcrumbs
salt (and pepper)
4 Tbsps vegetable oil
1 Lettuce
150 grams Cherry tomatoes
1 Radicchio
2 Tbsps White vinegar
4 Tbsps olive oil
salt (and pepper)
½ whole lemon (for garnish)

Preparation steps

Drain the tofu and cut into slices. Rinse, zest and juice the lemon. Combine the ground almonds, breadcrumbs, salt and pepper. Drizzle the tofu slices with lemon juice then coat in the almond mixture. Heat the vegetable oil in a large pan and fry the tofu for about 3 minutes on each side.

Rinse the lettuce and radicchio and pat dry. Rinse and halve the cherry tomatoes. Whisk together the white wine vinegar and olive oil and season with salt and pepper. Arrange the lettuce and tomatoes onto a serving plate and drizzle with the dressing.

Serve the fried tofu alongside the salad and garnish with a lemon wedge.
