400 grams white Beans (canned)
1 large, white onion
8 fresh Anchovy fillet (ready to cook)
2 Beefsteak tomato
2 Tbsps olive oil
salt
freshly ground peppers
200 grams black Olives
3 Tbsps white balsamic vinegar

Preparation steps

1.

Drain beans. Peel onion and cut into fine strips. Rinse anchovy fillets, pat dry and season with salt and pepper. Rinse, halve, and core tomatoes. Cut tomatoes into small cubes.

Heat olive oil in a pan. Add anchovies and fry on both sides until golden. Drain on paper towels.

Mix beans with onions, olives and diced tomatoes. Whisk 5 tablespoons olive oil with balsamic vinegar. Season with salt and plenty of pepper and toss with beans and onions. Carefully, mix in anchovy fillets. Let marinate about 1 hour. Serve cold as an appetizer. Serve with white bread and a fruity white wine, if desired.
