Apple Celery Salad

This light fall salad is a great source of vitamin C and fiber thanks to the apples and vitamins A and K from the celery.
Cut down on fat and calories by substituting the mayonnaise and whipping cream with low-fat greek yogurt.

- 9 ozs Celery
- 3 tart Apple
- 4 ozs Walnut
- juice of lemons
- 7 Tbsps Whipped cream
- 3 Tbsps Mayonnaise
- salt
- freshly ground peppers
- 1 pinch sugar
- 1 sm head Endive
- 3 slices Wheat bread
Preparation steps
Rinse and quarter the apples, then remove the core. Finely dice the apples (leaving some slices aside for garnish). Drizzle the apple pieces with the lemon juice.
Rinse, trim, and slice the celery.
Separate the leaves of the lettuce. Rinse the lettuce, dry, then cut into thin strips.
Cut the bread into cubes.
Whip the cream until semi-stiff. Gradually mix in the mayonnaise until a smooth, creamy sauce forms. Season to taste with salt, pepper, and sugar.
Mix the dressing with the apples, celery, lettuce, and bread. Transfer to a bowl, garnish with the sliced apples, and serve.
