- 6 ¾ ozs Bread flour
- 1 Tbsp Bread flour (to work)
- 2 ¾ ozs Raw cane sugar
- 1 pinch salt
- 3 ozs cold butter
- 2 eggs
- 3 ozs pecan kernels
- 2 tart Apple (e.g. Braeburn, Boskop)
- 3 Tbsps lemon juice
- 4 Tbsps wild honey
- 1 tsp cinnamon
- 1 Tbsp Whipped cream

Preparation steps
Mix 6.5 ounces flour, 2 tablespoons sugar, and 1 pinch of salt in a bowl. Add butter in pieces and 1 egg and knead everything quickly into a smooth shortcrust pastry. Form into a ball and cover and chill for approx. 30 minutes.
Meanwhile, chop 1 handful of pecans coarsely, the rest finely. Wash apples, quarter, core, slice finely and drizzle with 2 tablespoons lemon juice. Separate remaining egg; set yolks aside. Beat egg white with 2 tbsp. sugar, remaining lemon juice, and 2 tbsp. honey until stiff; mix in finely chopped nuts with cinnamon and 1 Tablespoon flour.
Divide dough in half. Dust work surface with remaining flour. Roll out 2 dough circles of approx. 1/6th-inch thickness and 8-inches Ø; press or cut dough edges to form clean edges. Place the dough circles on a baking tray lined with baking paper and spread with nut mixture, leaving an approx. 1-inch wide border all around.
Place apple slices on the nut mixture in a fan shape, fold the edge of the dough slightly over and press together. Whisk egg yolk with cream, spread on dough edges and sprinkle with remaining sugar. Place coarsely chopped nuts on top of apple wedges.
Bake apple galettes with pecans in a preheated oven at 180 °C / 350 °F for 30-35 minutes. While still warm or cooled, drizzle with remaining honey and enjoy.
