2 small Apple
1 lemon (juiced)
2 Tbsps Walnut oil

1 pinch sugar
2 ozs Arugula
3 ½ Tbsps Walnut
3 ½ ozs Goat cheese
4 Tbsps dried Cranberry
herb salt
freshly ground peppers

Preparation steps

1.

Peel kohlrabi. Rinse and dry apples, quarter and core. Cut kohlrabi and apples with a spiral cutter into thin strips. Drizzle with lemon juice and oil, season with salt and sugar. Let stand. 

2.

Rinse and spin dry arugula. Coarsely chop nuts. Crumble cheese. 

3.

Combine arugula with apples and kohlrabi strips, arrange on four plates. Sprinkle with nuts, cheese and cranberries and season with herb salt and pepper.
