750 grams Apricot
½ l white wine
150 grams sugar
1 Tbsp lemon juice
2 Tbsps Apricot jam
2 Tbsps Almond slivers

Preparation steps

1.

Blanch the apricots in boiling water. Remove from the water and peel. Cut the apricots in half and remove the stones. Bring the white wine, sugar, and apricots to a boil. Cook the mixture for 8 minutes. 

2.

Remove the apricots, then simmer the cooking liquid until syrupy. Season to taste with lemon juice, add the jam, and stir until combined. 

3.

Pour the syrup over the apricots, and cool. Toast the almonds in a dry non-stick pan. Sprinkle the almonds over the apricot compote before serving.
