- 4 Artichoke
- salt
- juice of lemons
- 400 grams Fettuccine
- 4 shallots (finely chopped)
- 2 garlic cloves
- 1 small red chili pepper (seeded and finely chopped)
- 1 Tbsp butter
- salt
- freshly ground peppers
- 125 milliliters dry white wine
- Parmesan (freshly grated)
Preparation steps
1.
Turn stems from the artichokes and remove lower leaves. Cut off hard blade tips, halve the artichokes and remove the pits.
2.
Cook artichokes in boiling salted water with lemon juice for about 30 minutes. Drain.
3.
Cook noodles according to package directions until al dente.
4.
Sweat shallots, chile and pressed garlic in hot butter until translucent. Add artichokes, season with salt and pepper, pour in white wine and simmer for a few minutes.
5.
Mix pasta with artichokes, arrange on plates and serve garnished with Parmesan.
