- 12 very small Artichoke
- 2 Zucchini
- 1 bunch parsley
- 4 garlic cloves
- 4 shallots
- 1 organic lemon (a little piece)
- 9 ozs Tagliatelle
- 2 Tbsps butter
- green peppercorns
- 5 ozs dry white wine
- 2 Tbsps olive oil
- 12 Sage
- black, freshly ground peppers
- Sea salt
Preparation steps
Rinse the artichokes and remove stems and lower leaves. Put 2 liters (approximately 8 1/2 cups) of water with a small piece of lemon in a saucepan, add the artichokes, cover and simmer 12 minutes. Remove, drain and cool the artichokes and then cut lengthwise into thin slices.
Rinse the zucchini and cut into thin sticks. Rinse the parsley, shake dry and chop small. Peel garlic and shallots and dice. Cook the tagliatelle in artichoke water until al dente, drain (save a little pasta water) and keep warm in the oven (70°C, approximately 160°F).
Place the artichoke slices in a pan, add the butter and cook the artichokes vigorously. Sauté zucchini strips, shallots, peppercorns and garlic. Deglaze with a little white wine and cooking water. Add olive oil, sage leaves and parsley, remove from heat and stir in the noodles immediately. Season to taste with pepper and salt and serve.
