- 4 Artichoke (cleaned and cubed)
- 1 shallot (finely diced)
- 1 garlic clove
- 1 tsp thyme
- 2 Tbsps butter
- 250 milliliters white wine
- 650 milliliters Broth
- juice of lemons
- salt
- freshly ground peppers
- ½ l Whipped cream
- 50 grams butter (cold)
Preparation steps
1.
Sauté artichokes, shallot, thyme and pressed garlic in hot butter. Pour in wine and broth and puree in a blender. Season with lemon juice, salt and pepper. Mix in the cream, boil down smooth, then thicken with butter flakes.

Serve in cups.
