- For the vinaigrette
- 2 Tbsps white wine vinegar
- 2 tsps Dijon mustard
- 1 clove garlic cloves (finely chopped)
- 6 Tbsps olive oil
- salt
- peppers
Preparation steps

Stand the artichokes side by side in a wide pan, half fill with water and add the lemon juice. Cover and cook over a medium heat for 25-30 minute, until the leaves pull away easily.
2.
For the vinaigrette: mix the vinegar, mustard and garlic. Whisk in the oil and season well.
3.
Drain the artichokes well and serve on plates with a small dish of vinaigrette.
