½ oz Chives
18 ozs fresh Strawberries
6 ozs Feta
2 ozs Walnut
14 ozs Chicken breasts (ready to cook, skinless)
5 Tbsps olive oil
salt
freshly ground peppers
2 Tbsps lemon juice
1 pinch sugar

Preparation steps

1.

Rinse arugula, trim, spin dry and transfer to plates. Rinse chives, shake dry and cut into small rings.

Rinse strawberries, trim and cut lengthwise into slices. Drain feta and cut into 1/2-inch small cubes.

3.

Toast walnuts in a hot dry skillet, remove from heat, allow to cool and chop coarsely.

4.

Rinse chicken, pat dry, cut into thin slices, fry on all sides in a hot pan with 2 tablespoons oil and season with salt and pepper. Remove chicken from the pan and let cool until lukewarm. Arrange chicken, feta cheese and strawberries on arugula. Sprinkle walnuts over it.

5.

For the vinaigrette, mix lemon juice in a bowl with remaining oil and chives and season with salt, pepper and sugar.

6.

Drizzle vinaigrette over the salad and serve.
