2 centimeters fresh ginger
2 garlic cloves
3 Tbsps dark soy sauce
1 tsp honey
soybean oil
600 grams duck legs (ready to cook)
400 grams Snow peas
salt
300 grams onions
1 Tbsp Oyster sauce
freshly ground peppers
2 Tbsps chopped parsley

Preparation steps

1.

Prepare marinade by combining ginger and peeled garlic. Chop both finely and mix with soy sauce, 4 tablespoons of soy oil and honey.

Rinse meat, pat dry, cut into thin strips, combine with marinade and let stand for about 30 minutes.

Rinse and dry snow peas. Blanch in boiling salted water for 3-4 minutes. Drain, rinse with cold water and drain again, cut diagonally into wide pieces.

Peel onions, halve and cut into narrow strips.

 Remove meat from marinade and drain. Heat 2 tablespoons of oil in a wok and saute duck on high heat. Remove meat from wok and set aside.

6.

Saute onions and snow peas in a wok, return duck, season with marinade, oyster sauce and pepper. Arrange on plates and sprinkle with parsley. Serve.
