500 grams kitchen-ready Scallop

500 grams Snow peas
50 grams Sesame seeds
4 Tbsps vegetable oil
2 Tbsps soy sauce
50 milliliters dry white wine
2 Tbsps Hoisin sauce
250 grams Chinese Egg noodle

Preparation steps

1.

Rinse scallops with cold water, pat dry, sprinkle with lemon juice and season with salt and pepper.

2.

Peel and finely chop ginger and garlic. Rinse, trim and chop scallions. Rinse, trim and pat snow peas dry.

3.

Heat wok. Add sesame seeds and swirl until toasted. Remove and place on a plate.

4.

Add 3 tablespoons oil to wok. Add scallops and cook about 1 minute per side. Remove and place on a plate. Add ginger, garlic and scallions, along with the remaining oil. Cook, stirring.

5.

Cook noodles according to package directions.

6.

Add snow peas to wok and stir-fry a few minutes. Season with salt, pepper, soy sauce, white wine and hoisin sauce. Stir in scallops and toasted sesame seeds, season to taste and serve on Chinese egg noodles.
