12 ozs Ground beef
2 ozs whole grain breadcrumbs (2 TBSP.)
1 egg yolk
salt
peppers
½ tsp ground Cumin
½ tsp ground Coriander
½ tsp cinnamon
1 generous pinch ground allspice
2 Tbsps olive oil
1 shallot
1 Tbsp butter
2 cloves
1 Cinnamon stick
1 Tbsp honey
6 Tbsps Cherry juice
7 ½ ozs whole wheat pita bread (or wholewheat flatbread)

Preparation steps

1.

Wash the sour cherries, cut them in half, and pit them. Mix meat with breadcrumbs, egg yolk, salt, pepper, and ground spices. Form 12 balls about 1-inch in size from the spiced meat mixture.

Heat oil in a frying pan and fry meatballs on all sides over medium heat for about 7-8 minutes. Then remove and drain the meatballs on paper towels.

At the same time, peel the shallot and dice finely. Heat butter in a pan, and sauté shallots in it for 3 minutes at low heat. Add cherries, cloves, and cinnamon stick, drizzle with honey and let caramelize for 2 minutes. Then deglaze with cherry juice and let everything simmer for 10 minutes at low heat. Remove the whole spices from the sauce.

Lightly crush the cherries. Add meatballs to the sauce and simmer for another 4 minutes. Then serve with the bread.
