250 grams Chinese Egg noodle
3 Bell pepper ((red, yellow and green)
2 carrots
2 onions
1 handful Sprout
1 red chili pepper
600 grams Beef fillet
1 pc ginger (about 1.5 cm)
2 Tbsps sesame oil
2 Tbsps coarsely chopped Thai basil
Fish sauce
freshly ground peppers

Preparation steps

Cook the egg noodles according to the package instructions.

Rinse the bell peppers, cut in half and remove seeds and white inner ribs, then cut into narrow strips. Peel carrots and cut into fine matchsticks. Peel the onions and roughly chop. Rinse the sprouts in a colander and drain well. Rinse the chile pepper, halve, remove seeds and finely chop. Rinse the meat, pat dry and cut into strips. Peel the ginger and grate finely.

In a wok, heat oil and fry the meat strips on all sides. Remove from the wok and set aside. Add the vegetables along with ginger and chile pepper and stir-fry for 2-3 minutes. Add 3-4 tablespoons fish sauce and a little water and simmer 1-2 minutes. Return the meat to the wok and stir until cooked through, then add the drained noodles and basil. Season to taste with additional fish sauce and pepper and serve.
