400 grams waxy potatoes
2 Tbsps butter
salt
500 grams green Asparagus
8 eggs
50 milliliters Whipped cream
freshly ground peppers
80 grams grated Cheese (such as, Emmentaler)

Preparation steps

1.

Peel, rinse and dice the potatoes. Sauté briefly in some butter in a large pan. Season with salt and pour in a little water. Cover and cook for about 10 minutes, until tender.

Peel the bottom third of the asparagus. Blanch in salted water for about 5 minutes, rinse and drain well.

Preheat the oven to 180°C (approximately 350ºF).

Beat the eggs with the cream and season with salt and pepper.

Remove the lid from the pan and let the liquid evaporate. Pour the eggs over the potatoes and remove from the heat. Top with green asparagus and shower with the cheese.

Bake in the oven for about 20 minutes until golden brown.

6.

Cut into pieces and serve garnished with arugula if desired.
