- 600 grams green Asparagus
- 1 Red Bell pepper
- 2 scallions
- ½ bunch cilantro
- 2 Tbsps vegetable oil
- 2 tsps grated ginger
- 4 Tortillas
- 4 leaves green Lettuce
- 8 slices Prosciutto
- salt

Preparation steps

Rinse green asparagus and cut ends and blanch in boiling, salted water for about 8-10 minutes and drain, rinse and drain. Rinse peppers, drain and wipe dry and cut in half and remove seeds and ribs and cut into thin strips. Rinse scallions and shake dry and cut into thin rings. Rinse cilantro, shake dry and finely chop. In a pan, heat oil and fry peppers and add ginger and season with salt and pepper.

Warm tortillas according to package instructions. Rinse lettuce and spin dry. Place lettuce, asparagus and prosciutto on warmed tortilla and roll up. Arrange peppers, scallions, and cilantro on top of tortilla wrap. To serve, cut each tortilla wrap diagonally and arrange on plate.
