Asparagus Bake

- 500 grams green Asparagus
- 500 white Asparagus
- salt
- 1 fresh lemon (juiced)
- 2 Tbsps butter (for the pan)
- 1 garlic clove
- 400 milliliters Whipped cream
- 200 milliliters milk
- 4 eggs
- 100 grams grated Gruyere
- 50 grams grated Parmesan
- salt
- freshly ground peppers
- 1 pinch freshly ground Nutmeg
- 4 scallions
Preparation steps
Preheat the oven to 200 ° C top and bottom heat Preheat.
Rinse asparagus, trim woody ends and peel white asparagus. Peel the ends of green asparagus. Blanch white asparagus in boiling salted water with the juice of one lemon for about 5 minutes. Add green asparagus and blanch for 5 more minutes. Drain, rinse in cold water and drain again. Peel garlic and squeeze through a garlic press. Combine cream with milk, eggs, grated Gruyère, Parmesan and crushed garlic and season with salt, pepper and freshly grated nutmeg. Butter 4 ramekins. Arrange asparagus in 4 ramekins and pour milk mixture over.
Bake in preheated oven at 200°C (approximately 400°F) for about 25 minutes or until golden brown.
Rinse and dry scallions, cut into rings. Sprinkle asparagus gratin with scallions and serve.
