4 Tbsps Whipped cream
1 egg
2 egg yolks
1 Tbsp chopped parsley

Preparation steps

Rinse the asparagus, peel, trim the woody ends and cut off the tips. Set the tips aside and chop the spears. Melt 1 1/2 tablespoons butter in a frying pan, sauté the asparagus, add the broth and cook for 10 minutes, until soft. Season with salt, pepper, sugar and nutmeg.

Add the cream then purée. Stir in egg, egg yolks and parsley. Grease 4 ramekins with butter, fill with the custard, place in a hot water bath and bake in a preheated oven at 180°C (approximately 350°F) for 20-25 minutes. Season to taste and garnish with the reserved asparagus tips.
