2 cups water
16 ozs Asparagus (rinsed and trimmed)
1 sheet frozen Puff pastry (thawed)
1 egg (beaten)
garlic powder
1 ¾ cups Gruyere (thinly sliced)
10 slices Prosciutto (sliced in half lengthwise)
4 sprigs fresh parsley
Hollandaise sauce for drizzling (optional)

Preparation steps

In a large skillet, bring water to a rapid boil. Add asparagus; cover and cook for about 3 minutes. Drain and plunge into ice cold water to stop the cooking process; drain and pat dry. Set aside.

Preheat oven to 400º F.

Unfold thawed pastry sheet on a lightly floured work surface. Using a pizza cutter or sharp knife cut the pastry into 4 equally-sized rectangles. Place on the rectangles on a baking sheet. Brush the pastry lightly with egg wash and sprinkle to taste with garlic powder.

Wrap a thin slice of cheese, followed by a slice of prosciutto around each asparagus spear and divide the asparagus between the puff pastry.

Garnish and a parsley sprig and bake for 15 to 20 minutes, or until the pastries are golden brown. Divide between plates and drizzle with Hollandaise sauce if desired. Serve.
