- 300 grams Sushi rice
- 60 milliliters Rice vinegar
- 1 tsp salt
- 1 Tbsp sugar
- 10 boiled, kitchen-ready shrimp
- 10 slices Cuttlefish (cooked)
- 10 Sardine kitchen-ready (or fish of your choice)

- Cucumber
- Radish
- Lemon wedge
- Chives
- Cress
- Caviar
Preparation steps

Swivel rice in a bowl with cold water and drain the water. Repeat as many times as needed until the rice is washed and the water is clear. Let the rice stand in the water for about 1 hour and then pour through a sieve. Boil 400 ml of water (approximately 14 ounces) and cook the rice covered for about 1 minute. Turn down the heat to low and simmer until the rice absorbs all the water. Place the rice in a shallow bowl and let cool slightly. Heat the vinegar with salt and sugar and fold into the rice.

With wet hands, mold the rice and fill with shrimp, squid and sardines (or other fish of choice). Wrap rice around the filling. Garnish as desired with cucumbers, radishes, lemon wedges, chives, cress and caviar.
