Preparation steps

Preheat the oven to 200°C (approximately 350°F) on the convection setting.

Rinse and drain the spinach. Peel and chop the shallots and garlic.

Grease 4 serving ramekins with 1 tablespoon olive oil. Heat the remaining olive oil in a pan. Cook the shallots and garlic until soft. Add the spinach and cook on low heat. Season with salt and nutmeg. Mix in the cream and half the parmesan. Divide the spinach into the ramekins. Make a well in the spinach in the ramekins and crack 1 egg into each well. Top with the remaining parmesan cheese. Bake in the preheated oven bake for 10-15 minutes until the egg white if firm and the yolk is still runny. Serve seasoned with salt and pepper.
