The Florentine eggs in the puff pastry provide biologically very valuable protein through the hen's egg; there is even more protein in the yolk than in the egg white. The hen's eggs also score points for all fat-soluble vitamins and the minerals calcium and phosphorus for healthy bones.

2 handfuls Baby spinach
8 eggs

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Grease 8 wells of a muffin tin. Cut puff pastry into 8 circles, slightly larger than the diameter of the wells. Press dough into wells.

Rinse spinach, spin dry and chop. Evenly distribute into the wells. Crask on egg into each well. Sprinkle with salt and pepper. Bake for about 20 minutes, until lightly browned. Remove, release from pan and serve warm.
