800 grams potatoes
salt
20 grams Chives
60 grams Boiled ham
2 eggs
100 grams grated Cheese (such as Emmentaler)
80 milliliters milk
Pastry flour (as needed)

Preparation steps

1.

Peel and rinse potatoes, cook for about 30 minutes in boiling salted water. 

2.

Rinse and shake dry chives, cut into small rings. Separate eggs. Cut ham into small cubes.

3.

Drain potatoes and press through a ricer. Let evaporate and combine with egg yolks, ham, chives, cheese and milk. Add a little flour, if necessary.

Line baking sheet with parchment paper.

Beat egg whites with 1 pinch of salt until stiff and fold into potato mixture. With a wet spoon, remove small portions from the mixture and arrange on a baking sheet. Bake in preheated oven at 200°C (approximately 400°F) for about 15 minutes or until golden brown.

6.

Serve potato cakes warm or cool.
