- 6 whole wheat crackers
- 11 ozs Pumpkin seed
- 2 ozs Millet
- ½ Lime
- 1 Vanilla bean
- 2 Quince
- 5 eggs
- 4 ozs Raw cane sugar
- 3 Tbsps milk
- 2 Tbsps Maple syrup

Preparation steps
Break crackers into large pieces. Finely grind in a mini chopper with pumpkin seeds and millet.
Squeeze juice from lime half.
Halve vanilla bean lengthwise and scrape out the seeds.
Rinse quinces, wipe dry and finely grate. Mix with lime juice.
Separate the eggs. Beat egg whites and 2 tablespoons cold water with a hand mixer until very stiff. Sprinkle in sugar and continue to beat until the sugar is dissolved.
Beat in egg yolks one at a time.
Add the ground cracker mixture to egg whites, then fold in grated quince and vanilla seeds.
Line a baking sheet with parchment paper. Moisten a rubber spatula with water and spread the batter on the baking sheet. Bake in a preheated oven at 400°F for 20-25 minutes.
Mix milk and maple syrup in a small bowl. Remove quince cake from the oven and while hot drizzle with the milk mixture. Cut into 30 pieces and allow to cool before serving.
