Nutritional values
The fat contained in the colourful potato mixture is well invested: It consists mainly of unsaturated fatty acids.
Those who prefer to do without the bacon can either leave it out altogether or replace it with diced feta. You can sprinkle these over the potatoes about 15 minutes before the end of the baking time.

Ingredients
Preparation steps
Cut the bacon into strips. Peel the onion and cut into fine strips. Rinse the potatoes and cut into wedges.
Mix the potatoes, onion strips, bacon and olive oil. Spread the potato mixture onto a baking tray and season with salt and pepper. Bake for about 40 minutes at 200°C (approximately 400°F), turning occasionally.
Rinse the rosemary, shake dry and pluck the leaves. About 5 minutes before the end of cooking, sprinkle the rosemary on the potatoes. Serve hot.
