1 red onion
300 grams yellow, waxy potatoes
300 grams red, waxy potatoes
300 grams violet purple potato
6 Tbsps olive oil
Sea salt
freshly ground peppers
2 sprigs rosemary

Preparation steps

1.

Cut the bacon into strips. Peel the onion and cut into fine strips. Rinse the potatoes and cut into wedges.

Mix the potatoes, onion strips, bacon and olive oil. Spread the potato mixture onto a baking tray and season with salt and pepper. Bake for about 40 minutes at 200°C (approximately 400°F), turning occasionally.

3.

Rinse the rosemary, shake dry and pluck the leaves. About 5 minutes before the end of cooking, sprinkle the rosemary on the potatoes. Serve hot.
